Nowadays there is an unquestionable global demand for the decrease of waste.
Especially in the Hospitality and Catering area this demand is in priority as tones of food waste is thrown away everyday.
This situation we all face today is an emergency and special directions must be implemented to our daily lives in order to save the planet.
People like to shop and they consume only a percentage of what they buy, while others live in complete poverty and luck of any nutrition and healthy food resources.
The professionals in the hospitality and catering area on the other hand feel frustrated between a proper food preparation for the buffets of their establishments and the volume of food that is not consumed.
What is enough? How can the customer be pleased and the cook still keep the waste low?
This unbalanced situation together with the good obligations that the European Union has imposed to the businesses for a future with Zero Waste communities, brought us to the ZWITCH project.
