Al giorno d’oggi c’è un’indiscutibile richiesta globale di riduzione dei rifiuti.
Questa esigenza è prioritaria soprattutto nel settore dell’ospitalità e della ristorazione, dal momento che ogni giorno vengono sprecate tonnellate di rifiuti alimentari.
La situazione che ci troviamo ad affrontare oggi è un’emergenza e per salvare il pianeta è necessario attuare delle linee guida specifiche nella nostra vita quotidiana.
Le persone amano fare acquisti e consumano solo una percentuale di ciò che comprano, mentre altre vivono in completa povertà e prive di risorse alimentari sane e nutrienti.
I professionisti dell’ospitalità e della ristorazione, d’altra parte, provano un senso di frustrazione nel dover predisporre il cibo per i buffet dei loro locali e fare i conti con ciò che non viene consumato.
Cos’è sufficiente? Come si può soddisfare il cliente, ma mantenere bassi gli sprechi?
Questa situazione di squilibrio, unita ai vincoli che l’Unione Europea ha imposto alle imprese per un futuro con comunità a Rifiuti Zero, ci ha portato a sviluppare il progetto ZWITCH.
